Chef Albert's award-winning Seafood Laksa

Seda Atria’s Misto Restaurant brings the taste of Singapore to Iloilo City as it features its award-winning Seafood Laksa dish starting August to September.


Seda Atria’s Chef de Partie Albert Ledesma shares his winning dish during the Elite Chef Challenge 2016 wherein he emerged as champion, besting 12 other chefs from different restaurants and hotels in Western Visayas.

The said noodle dish is made from creamy broth with coconut cream as its base. It was made even flavorful with the mix of seafood slices and a little spice brought by the laksa paste.

Garnished with tender pieces of squid, shrimp, squid balls, fish cake and eggs, Chef Albert never missed to give tribute to the Singaporean origin of the dish.


The perfectly cooked vermicelli (rice noodles), on the other hand, seamlessly complements the flavors of coriander, chilies, lemongrasses, and lime juice. Imagine all these ingredients mixed in one dish generously served to provide every diner a great gastronomic experience. This is what you get when you try Misto Restaurant’s take on the famed Seafood Laksa.

According to Chef Albert the secret to his Seafood Laksa is the laksa paste sautéed with little oil which deepens the flavor and enhances the aroma of the dish before adding the stock and coconut cream.

Chef Albert is not new in the culinary world. His ten years of experience as a chef in a fine-dining Italian restaurant abroad gave him the edge among his contenders in the Elite Chef Challenge.


A native of Jaro, Chef Albert has also worked in the finest hotels and restaurants in the Middle East before returning here in Iloilo City to share to his fellow Ilonggos his passion on food.

“Cooking has always been my passion and I am glad that Seda Atria has given me the opportunity to grow as a chef,” he said.

Chef Albert’s award-winning Seafood Laksa is available at Mist restaurant at Seda Atria from 12 noon to 10 pm daily. Enjoy this flavorful dish and savor the taste of victory for only P200 nett.
