MEET THE CHEF

Behind these gastronomic feast is the young Outlet Chef of The Mansion. Meet Chef Carlos T. Lanzona...

As a child, Chef Carlos developed a low self esteem growing in an environment where people shove down what they think of you and that you wouldn't amount to anything day in and day out. He even refused to go to college because he though that he will just waste his parents' money.

But things changed when he passed by into a rummage book sale where he came across Anthony Bourdain's "Kitchen Confidentials", a gruelling cautionary tale about the ins and outs of the culinary industry.

Chef Carlos got hooked and started to romaticize the sub culture of the "line cook" and finally realized that it was his calling.

"If a couldn't make it as a local icon with a band, I would do it in the kitchen teaching and learning, like Anthony Bourdain would", said Chef Carlos.

He enrolled at the Magsaysay Institute of Hospitality and Culinary Arts Incorporated where he earned a degree in Professional Culinary Arts.

Now, he is part of the culinary team of The Mansion as Outlet Chef who is in-charged of managing the activities and processes. procedures and training of cooks and other kitchen workers engaged in preparing and cooking for the hotel outlets to ensure a quality, efficient and effective food service to bring world class dining experience to Ilonggos and the hotel's guests.
